Banana Prawns and Avocado

If you want to impress and don't want to spend hours in the kitchen!

YOU WILL NEED:

  • 1 kg Wild Banana Prawns.
  • 2 Avocados.
  • 2 Tablespoons Lemon Juice.
  • 4 Spring Onions, chopped.
  • 2 Large ripe Tomatoes, peeled and de-seeded.
  • Freshly ground Black Pepper.
  • Salt

INSTRUCTIONS:

Peel and clean the Prawns, leaving the tail intact.

Bring a pan of lightly salted water to the boil and add the Prawns. Reduce the heat to a simmer and cook 3 to 4 minutes or until the flesh turns white. Do not overcook. Drain and cool. Remove 4 Prawns and chop coarsely.

Cut the Avocados in half and scoop the flesh onto a board. Chop roughly and put into a bowl.

Add the Chopped Prawns, Lemon Juice, Spring Onions and Tomato flesh which has been squeezed to remove excess moisture.

Season with freshly ground Black Pepper and a little Salt.

Pack into a greased mould and refrigerate.

To serve, unmould onto a plate and garnish with Prawns and Lime or Lemon wedges.

Serves 4.
