Ginger and Lemon Grass Wild Banana Prawns

Very tasty Wild Banana Prawns recipe with an exotic twist


  • 1 kg Wild Banana Prawns.
  • 1 2 cm piece Lemon Grass, finely chopped.
  • 1 Tablespoon freshly grated Ginger.
  • ¼ cup Lime Juice.
  • ½ cup Olive Oil.
  • Lemon Grass stalks or soaked bamboo skewers.


  • 200ml natural Yogurt or Crème Fraiche.
  • 1 Tablespoon chopped Mint.
  • 1 Tablespoon chopped Coriander.
  • 1 Teaspoon grated Lime Zest.


Peel the Prawns leaving the tail intact.

Combine Lemon Grass, Ginger, Lime Juice and Olive Oil together in a shallow dish. Add the Prawns and set aside for the flavours to develop.

Meanwhile, in a small bowl, combine the Yogurt or Crème Fraiche with the Mint, Coriander and Lime Zest, to make a dipping sauce.

Drain the Prawns from the flavoured Oil and thread carefully on to the Lemon Grass or bamboo skewers.

Cook on a hot barbeque plate for two minutes on each side or until firm. Do not overcook. Serve the skewers with the sauce.

Serves 4.
