Wild Banana Prawn, Leek and Spinach Linguine

Makes a healthy and interesting pasta dish. Super quick.

YOU WILL NEED:

  • 1 kg green (raw) Wild Banana Prawns, peeled and cut into chunks.
  • 500g Linguine.
  • 3 Tablespoons Olive Oil.
  • 2 Leeks, cut into strips.
  • 200mL Tomato puree (sugo).
  • 1 Tablespoon Lemon Rind.
  • 150g Baby Spinach leaves.
  • Cracked Pepper and Salt to taste.

INSTRUCTIONS:

Cook the Linguine in a saucepan of rapidly boiling salted water until ‘al dente’.

While the Pasta is cooking heat the Olive Oil in a frypan and gently cook the Leek till golden. Add the Prawns and stir till the flesh just becomes firm, about two minutes.

Stir in the Tomato puree and continue to cook for a further two minutes.

Add the Lemon Rind and Spinach and toss over the heat till the Spinach has wilted.

Put the drained Linguine in a large serving bowl and toss with the mixture. Season with cracked Pepper and Salt to taste.

Serves 4.
